## Sparkling Wine Production

### Méthode Traditionnelle (Champagne Method / Méthode Champenoise)

The most complex and labor-intensive method of producing sparkling wine. The defining characteristic: a second fermentation occurs inside the individual bottle that the consumer ultimately opens.

**The Complete Process:**

**Step 1: Base Wine (Vin de Base)**
Grapes are harvested at lower sugar/higher acid than typical table wine (target approximately 8–9% potential alcohol in Champagne — very underripe by red wine standards). Multiple base wines are made from different grape varieties (Chardonnay, Pinot Noir, Pinot Meunier), different villages (crus), and different years. These are then blended by the winemaker (assemblage).

**Step 2: Assemblage (Blending)**
For non-vintage (NV) Champagne, reserve wines from previous years (held back specifically for this purpose) are blended with the current vintage's base wine. The goal: consistency across years. A house's NV style should taste the same regardless of whether the base year was 2019 or 2021. This is a profound act of blending skill — constructing a consistent "house style" from variable annual inputs.

**Step 3: Liqueur de Tirage**
A mixture of wine, sugar (typically 24 g/L), and a selected yeast strain (typically EC-1118, high alcohol-tolerant) is added to the bottled base wine. The bottle is closed with a crown cap (metal cap, like a beer bottle).

**Step 4: Second Fermentation (Prise de Mousse)**
The bottles are placed on their sides in the Champagne caves (cool, consistent temperature: 10–12°C). The yeast ferments the added sugar, producing approximately 1.2–1.3% additional alcohol AND 6 atmospheres of pressure (CO₂ trapped in the sealed bottle). This is the birth of the bubbles.

**Step 5: Lees Aging (Sur Lattes)**
After second fermentation completes, the dead yeast cells (lees) remain in the bottle. The wine ages on these lees for a minimum legally defined period:
- Non-vintage Champagne: minimum 15 months sur lattes (most houses: 24–36 months)
- Vintage Champagne: minimum 3 years (most prestige cuvées: 5–10+ years)

**Autolysis:** The process by which the dead yeast cells break down and release their cellular contents into the wine. These compounds — amino acids, polysaccharides, nucleotides — create the characteristic brioche, toast, biscuit, and bready notes of aged Champagne. Longer lees aging = more autolytic character. Young, minimal lees-aged Champagne = cleaner, fruit-forward. Long-aged (prestige cuvée, vintage) = complex, toasty, deep.

**Step 6: Riddling (Remuage)**
The lees must be moved from the side of the bottle to the neck for removal. Traditional method: Bottles are placed in pupitres (A-frame wooden racks) at an angle. A riddler (remueur) turns each bottle one-eighth of a turn every day, gradually tilting it from horizontal to vertical (inverted). Full riddling: approximately 6 weeks of daily turning. The yeast plug slowly accumulates in the neck of the bottle.

**Modern alternative: Gyropalettes** — large hexagonal cages holding hundreds of bottles, mechanically rotated by computer program. Complete riddling in 8–12 hours rather than 6 weeks. Cost-effective. Most large Champagne houses use gyropalettes for NV production; prestigious cuvées may still use hand riddling.

**Step 7: Disgorgement (Dégorgement)**
The neck of the inverted bottle is plunged into a freezing brine solution (-27°C). The yeast plug in the neck freezes into a solid pellet. The crown cap is then removed — the 6 atmospheres of pressure shoots the frozen plug out of the bottle, removing the yeast cleanly with minimal wine loss.

**Timing:** Disgorgement happens just before commercial release. The "recently disgorged" or "RD" (récemment dégorgé) designation at Bollinger indicates the wine has aged much longer than typical before disgorgement — receiving the full benefit of extended autolysis, then disgorged fresh to preserve maximum effervescence.

**Step 8: Dosage (Liqueur d'Expédition)**
After disgorgement, the wine level in the bottle is reduced slightly. A small amount of wine mixed with cane sugar (the expedition liqueur, or dosage) is added. The amount of sugar in the dosage determines the wine's sweetness designation:

**Note on naming:** "Extra Dry" sounds drier than "Brut" but is actually sweeter. This counter-intuitive labeling reflects historical conventions.

**Step 9: Corking and Caging (Muselet)**
A Champagne cork (larger diameter than still wine cork, compressed to fit the bottle neck) is inserted and held in place by a wire cage (muselet). The characteristic "mushroom" shape develops after insertion.

**Where Méthode Traditionnelle Is Used:**
- Champagne (France): The origin and the most regulated/prestigious application
- Cava (Spain): Traditional method, primarily Xarel·lo/Macabeo/Parellada grapes, Penedès. Lower minimum aging than Champagne. Different flavor profile (earthier, more oxidative in traditional style; fresh and clean in modern)
- Crémant (France): Sparkling wines from eight French regions outside Champagne (Crémant d'Alsace, Crémant de Bourgogne, Crémant du Jura, etc.) made by traditional method
- Franciacorta (Italy): Italy's prestige traditional method, Chardonnay/Pinot Nero/Pinot Bianco from Lombardy. DOCG. Serious aging requirements. Italy's Champagne equivalent.
- Cap Classique (South Africa): Traditional method, Chenin Blanc/Chardonnay/Pinot Noir. Quality has risen significantly in the 2010s–2020s.

### Charmat / Tank Method (Cuve Close / Prosecco Method)

**Key difference from traditional method:** The second fermentation occurs in a large pressurized tank, not in individual bottles.

**Process:**
Base wine → Pressurized tank → Liqueur de tirage added → Second fermentation in tank → Tank remains pressurized → Wine filtered under pressure → Dosage added → Bottled under counter-pressure (no oxygen contact)

**Why it works for Prosecco:**
- Faster (weeks vs months/years)
- Much cheaper (no individual bottle handling, riddling, disgorgement)
- Preserves primary fruit aromatics — the tank's large volume and relatively short secondary fermentation creates a fresher, fruitier style than traditional method's extensive autolysis
- Glera grape (Prosecco's base): delicate white peach and green apple aromatics are the selling point, not autolytic complexity

**Prosecco context:** Made from Glera grape in the Veneto and Friuli-Venezia Giulia regions of Italy. Three quality levels: Prosecco DOC (broadest), Prosecco Superiore DOCG (Conegliano Valdobbiadene), Cartizze DOCG (prestige single sub-zone). Charmat method is not inferior — it's correct for the style intended. The wine is meant to be fresh, light, and immediately appealing, not complex and toasty.

**Pressure:** Prosecco: typically 2.5–3.5 bar. Champagne: 5.5–6 bar. The lower pressure creates smaller, more ephemeral bubbles — a textural difference.

**Other Charmat wines:** Moscato d'Asti (very low pressure, 1–2 bar, often slightly sweet), Lambrusco (Emilia-Romagna, red sparkling, Charmat method).

### Ancestral Method / Pétillant Naturel (Pét-Nat)

**The original sparkling wine method.** Bottles a wine that has not yet completed its first (and only) fermentation, trapping the naturally-produced CO₂.

**Process:** Wine is bottled when approximately 10–30 g/L of sugar remains unfermented. Fermentation completes slowly in the sealed bottle. CO₂ is trapped. No secondary fermentation, no dosage, no riddling, no disgorgement — the yeast remains in the bottle.

**Characteristics:**
- Lower pressure than Champagne (typically 2–3 bar) — gentle pétillance rather than full effervescence
- Often cloudy from residual yeast
- Lower alcohol (residual sugar was fermenting when bottled — final alcohol depends on how much was converted)
- "Funky" or "farmyard" notes from the extended yeast contact and natural fermentation character
- Variable bottle-to-bottle (different fermentation completion rates)
- No dosage → no added sugar → dry or nearly dry by definition

**The natural wine positioning:** Pét-nat represents maximum intervention avoidance. One fermentation, no additions, no riddling, no disgorgement. The yeast deposit at the bottom is not a fault — it is evidence of authenticity. Beloved by natural wine producers globally.

**Historical note:** The ancestral method originated in Limoux (southern France) and Gaillac before traditional method was developed. The Blanquette Méthode Ancestrale from Limoux is the oldest documented sparkling wine, predating Dom Pérignon's work in Champagne by at least a century.

### Transfer Method

**Hybrid between traditional and Charmat:**
- Second fermentation in individual bottles (like traditional method, with autolytic character development)
- Before disgorgement: entire lot of bottles is emptied under pressure into a large tank, the wine is filtered (removing lees), then rebottled under counter-pressure

**Why:** Combines the autolytic character of bottle fermentation with the efficiency of tank handling at scale. No individual riddling or disgorgement required.

**Where used:** Australian sparkling (Seppelt Great Western, the historic base for Australian sparkling tradition), some entry-level sparkling from traditional method regions.

## Fortified Wine Production

### Port

**Region:** Douro Valley, Portugal. The grapes are grown in the steep schist vineyards along the Douro River and its tributaries. The wine is made in quintas (estates) and lodges (in Vila Nova de Gaia, across the river from Porto, where most aging occurs).

**The Grape Varieties:**
Over 80 varieties are authorized; the principal ones are: Touriga Nacional (most prestigious, floral/tannic), Touriga Franca (volume, soft), Tinta Roriz (Tempranillo — freshness, red fruit), Tinta Barroca (softer, aromatic), Tinta Cão (aging backbone).

**The Fortification Process:**
1. Harvest. Grapes crushed (traditionally by treading in stone lagares — still used for premium production; mechanically for most commercial volume).
2. Fermentation begins. Target: approximately 6–7% ABV (roughly 40–50% of the sugar is fermented).
3. Aguardente (Portuguese grape spirit, typically 77% ABV) is added in the ratio of approximately 1:4 spirit to must by volume. This immediately raises the alcohol to approximately 19–20% ABV.
4. The high alcohol kills the yeast. Fermentation stops immediately. All remaining grape sugar is preserved in the wine.
5. The resulting wine: approximately 19–22% ABV, 80–120 g/L residual sugar.

**Why the high-ABV spirit concentration matters:** At 77% ABV, relatively little spirit is needed to raise the wine to 19–20% ABV, which means relatively little dilution of the wine's flavor. Port is not diluted by spirit — it is fortified.

**Styles:**

**Ruby Port (basic):** Young, aged briefly in large vats (minimal oxidation). Deep red/purple color. Fresh red fruit, simple, accessible. The foundation of the Port category. Includes "Reserve" and "LBV" in the Ruby spectrum.

**Late Bottled Vintage (LBV):** Single vintage, aged 4–6 years in barrel before bottling.
- Filtered LBV: Filtered for stability, clean, no sediment, immediately accessible. The volume product.
- Unfiltered LBV (Traditional): Not filtered. Can improve significantly in bottle. More complex. Throws sediment — decanting required. The quality product.

**Vintage Port:** The Douro Valley's finest. Declared in exceptional years only (not every year — the shipper "declares" a vintage when quality warrants). Aged approximately 2 years in barrel, then bottled. Decades of bottle aging ahead.
- Throws heavy sediment (tartrates, pigment chains). Must be decanted.
- Peak: Typically 20–40 years after vintage.
- Declared vintages (major declarations, not exhaustive): 1945, 1963, 1966, 1970, 1977, 1983, 1985, 1991, 1994, 1997, 2000, 2003, 2007, 2011, 2016, 2017.
- Price: £500–£3,000+ per bottle for top declared vintages.
- Producers: Graham's, Dow's, Fonseca, Taylor's, Quinta do Vesuvio, Quinta do Crasto, Symington family estates generally.

**Tawny Port:** Aged oxidatively in small barrels (550L pipes) in attic-level lodges in Vila Nova de Gaia. The heat and oxygen gradually reduce the wine's volume, concentrate flavors, and shift color from ruby to amber/tawny.
- 10 Year Tawny: Average age of blend approximately 10 years. Orange/amber color, dried apricot, walnut, caramel, dried fruit.
- 20 Year Tawny: More concentrated, darker amber, more nutty/oxidative complexity.
- 30 Year and 40 Year: Exceptional complexity, very dark amber, intense, coffee/chocolate/dried fruit.
- Colheita: Single vintage Tawny, aged minimum 7 years in wood. Has both vintage specificity and oxidative character.
- Service: Slightly chilled (12–14°C). Once opened, Tawny keeps for several weeks (unlike Vintage Port, which needs drinking within days of decanting).

### Sherry

**Region:** Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María, Andalusia, Spain. The "Sherry Triangle."

**The Grape:** Palomino Fino (approximately 90% of plantings). Naturally low acid, neutral flavor — seemingly an unpromising base wine. The magic happens through the solera system and biological/oxidative aging.

**The Base Wine:**
Palomino Fino is harvested at full ripeness, fermented to complete dryness (approximately 12% ABV). The resulting wine is undistinguished on its own — light, neutral, high acid relative to its flavor. Then fortification and aging transform it.

**Fortification Strategy:**
- Wines destined for Fino/Manzanilla: Fortified to 15% ABV — low enough for the flor yeast to survive.
- Wines destined for Oloroso: Fortified to 17–18% ABV — high enough to kill the flor yeast.

**The Flor (Biological Aging):**
Flor is a cream-colored layer of Saccharomyces cerevisiae yeast that forms on the surface of wine in partially filled casks (butts, traditionally 500–600L). The yeast metabolizes acetaldehyde, glycerol, and ethanol, creating the characteristic saline, almond, and yeasty character of Fino Sherry.

Conditions required for flor: 15–15.5% ABV (any higher and flor dies), humidity, temperature (flor is more active in spring and fall; less active in summer and winter). Sanlúcar de Barrameda (coastal, higher humidity) maintains more active, thicker flor than inland Jerez — which is why Manzanilla (from Sanlúcar) has a more delicate, saltier, more penetrating flor character than Jerez Fino.

**The Solera System:**
A fractional blending system that maintains stylistic consistency across decades while aging wine continuously.

A solera consists of multiple rows (scales or criaderas) of barrels stacked or simply identified by age. The oldest wine is in the final scale (the "solera" scale); younger wine is in successively younger criaderas.

Process:
1. Withdraw (sacar) 1/3 to 1/2 of the wine from the oldest scale (the solera barrels) for bottling.
2. Refill the solera barrels from the first criadera.
3. Refill the first criadera from the second criadera.
4. Continue down through all criaderas.
5. Add new vintage wine to the youngest criadera.

**The effect:** Wine drawn from the solera contains fractions of every vintage ever added to it, going back to the solera's founding year. A Sherry solera established in 1850 still contains traces of 1850 wine. The fractional blending ensures the house style is self-correcting — a poor vintage's wine is diluted through the older, more established material. There is no vintage variation in Sherry (for solera-based wines) — there is only house style.

**The Sherry Styles:**

**Fino:**
- Color: Pale straw to golden
- Aroma: Almond, saline, bread, yeast, lemon zest
- Palate: Bone dry, crisp, saline, light body
- Production: Protected by flor throughout aging (15% ABV). Typically 3–5 years in solera.
- Service: Very cold (7–9°C), in copita glass, with tapas. Opens up with temperature.
- Drink fresh: Unlike other wines, Fino deteriorates within days to weeks of the bottle being opened (and the wine within weeks of being bottled commercially). Order from a tapas bar only if the bottle is fresh.
- Benchmark: Tío Pepe (González Byass), Lustau Fino Jarana, Valdespino Inocente

**Manzanilla:**
- Same as Fino but produced exclusively in Sanlúcar de Barrameda
- More delicate, saltier, more penetrating saline/maritime character from the humid Atlantic climate and more active flor
- Service identical to Fino

**Amontillado:**
- A Fino that continued aging after its flor died naturally (or was deliberately killed by adding alcohol beyond the flor's survival threshold).
- After flor: oxidative aging begins. Color darkens to amber.
- Flavor: Hazelnut, dried fruit, amber, toasted walnuts, complex. Dry (true Amontillado) or semi-sweet (commercial "Amontillado").
- A genuinely complex wine that shows both biological aging (the Fino foundation) and oxidative aging (the subsequent transformation).
- Benchmark: Tío Diego (Valdespino), Lustau Los Arcos

**Oloroso:**
- Fortified to 17–18% ABV at creation — no flor protection.
- Fully oxidative aging from the start.
- Dark amber to mahogany color.
- Rich, nutty, dark fruits (raisins, figs), walnut, tobacco. Complex, heady.
- Typically dry (but sometimes sweetened for commercial "cream Sherry").
- Benchmark: Palo Cortado Apóstoles (González Byass), Lustau Oloroso Emperatriz Eugenia

**Palo Cortado:**
- The rarest and most enigmatic style. Began as a Fino (protected by flor) but then the flor died spontaneously — despite apparently correct conditions.
- Develops: Amontillado-like nose (flor character, delicacy) + Oloroso-like palate (richness, depth).
- Claimed by producers to be identifiable as a distinct category at an early stage; skeptics suggest it is mostly deliberately created by fortification.
- The finest Palo Cortado: exceptional complexity that neither pure Amontillado nor Oloroso achieves.
- Benchmark: Sibarita (Domecq), Almacenista Palo Cortado (Lustau)

**Pedro Ximénez (PX):**
- Different grape variety (Pedro Ximénez, a white grape).
- Grapes sun-dried on mats (similar to passito method) for 1–3 weeks. Water evaporates, sugar concentrates to extraordinary levels (600+ g/L in extreme cases).
- Pressed, fermented briefly, fortified immediately. The result: intensely sweet, almost syrupy wine.
- Color: Deep mahogany to almost black.
- Flavor: Raisin, fig, prune, molasses, coffee, dark chocolate, dates. Extraordinarily sweet.
- Residual sugar: 300–500+ g/L. Among the sweetest wines in the world.
- Use: Poured over vanilla ice cream. Blended to sweeten other Sherries (Cream Sherry = Oloroso blended with PX).
- Benchmark: Toro Albalá Don PX 1946, González Byass Noé, Lustau San Emilio

### Madeira

**Region:** The volcanic island of Madeira, in the Atlantic Ocean, approximately 1,000 km from the Portuguese mainland.

**What makes Madeira unique:** It is the only wine deliberately heated and oxidized as part of production — and the only wine that actually benefits from this process. Where heat destroys almost every other wine, it creates complexity and near-indestructibility in Madeira.

**The Four Noble Varieties:**
- **Sercial:** Driest style. High acid, almond, citrus, saline. The Fino Sherry analog. Needs aging.
- **Verdelho:** Off-dry to medium. Smoky, spiced, golden, peach. Fuller than Sercial.
- **Bual (Boal):** Medium sweet. Rich, complex, dried apricot, honey, smoke.
- **Malmsey (Malvasia):** Sweetest. Luscious, honeyed, raisin, fig, complex. The most immediately pleasurable.

(Tinta Negra is the most widely planted variety for the more commercial, non-varietal labeled Madeira.)

**The Estufagem (Heating Process):**
The defining technique. Two methods:
1. **Canteiro (attic aging):** Barrels stored in upper floors of warm warehouses, heated by the sun naturally. Process: 2–20+ years. Slower, more complex. Used for all fine varietal Madeira.
2. **Estufagem (tank heating):** Large stainless steel tanks with heating coils raise wine temperature to 45–50°C for a minimum 3 months. Faster (months vs years), used for commodity Madeira.

**Why heating doesn't destroy Madeira:**
The combination of high alcohol (~19–22% ABV), high acid (naturally very high from the volcanic island's cool-altitude grapes), and the oxidative nature of the aging means the Maillard reactions and caramelization from heat add complexity rather than destroying the wine. The high acid prevents the flattening that cooked wine normally suffers.

**The near-indestructibility of Madeira:**
An open bottle of Madeira lasts months without significant change (due to high alcohol, high acid, and already-oxidized state). Bottles from the 18th and 19th centuries are still drinkable — and sometimes extraordinary. A 1795 Terrantez, an 1850 Bual — these are not museum pieces but genuine drinking experiences.

## Sweet Wine Production

### Botrytis Cinerea / Noble Rot

**The fungus:** Botrytis cinerea is a grey mold that attacks grapes under any conditions. In its malevolent form ("grey rot" or "bunch rot"): rain during harvest, damaged skins, and humid stagnant air = destroyed grapes, ruined vintage. In its benevolent form ("noble rot," pourriture noble, Edelfäule): very specific microclimate conditions transform it into the winemaker's most valued natural helper.

**Conditions for noble rot:**
Morning mist (from rivers or valleys) → grapes absorb moisture, skins soften slightly, Botrytis penetrates the skin → afternoon sun and wind dries the grapes. The fungus punctures the skin to extract water, concentrating everything remaining (sugar, acid, glycerol), while adding its own compounds (glycerol, gluconic acid, botrytis-specific aromatics).

**What Botrytis does to the grape:**
- Removes water (concentrates sugar from 200 g/L to 350–500+ g/L)
- Retains acid (proportionally concentrated)
- Adds glycerol (viscosity, richness)
- Adds botrytis-specific flavor compounds: honey, saffron, ginger, marmalade, mushroom (at excess: objectionable), complex spice

**Classic botrytized wines:**

**Sauternes (France):**
- Grapes: Sémillon (primary, 80%+), Sauvignon Blanc (acidity and aromatics), Muscadelle (floral, minor)
- The Ciron River creating morning mist over Sauternes and Barsac is the classic noble rot enabler
- Multiple passes through the vineyard (tries) to select only botrytized berries at each pass. Château d'Yquem: up to 11 passes. Time-consuming, expensive.
- The economics: One vine of Château d'Yquem produces approximately one glass of wine.
- Profile: Apricot, honey, saffron, marmalade, peach, ginger, extraordinary acid balance. 12–14% ABV.
- Aging: 20–50+ years. Château d'Yquem 1967, 1975, 1983, 1986, 1988, 1989, 1990 are legendary.
- Benchmark: Château d'Yquem (unique 1er Grand Cru Classé Supérieur — above all others), Château Rieussec, Château Suduiraut, Château Climens (Barsac, more acid-driven)

**German Prädikat Sweet Wines (Beerenauslese and Trockenbeerenauslese):**
- Beerenauslese (BA): Individual botrytized berries selected one by one. Very labor-intensive. Made only in exceptional vintages. Intensely sweet, high acid, profound.
- Trockenbeerenauslese (TBA): Only the most shriveled, raisin-dried botrytized berries selected. Essentially pure concentrated essence of grape. Very rare. 400–600+ g/L residual sugar. Minuscule yields (often 1 bottle per vine). The most labor-intensive, and among the world's most expensive wines.
- Both: High acid (especially Riesling-based) balances the intense sweetness. TBA can age for 50–100+ years.
- Benchmark: Egon Müller Scharzhofberger TBA, JJ Prüm Wehlener Sonnenuhr TBA, Donnhoff Niederhäuser TBA

**Tokaji Aszú (Hungary):**
- Grape: Furmint (primary), Hárslevelű, Sárga Muskotály
- Aszú berries (individually botrytized grapes) are collected into traditional puttony baskets
- Puttonyos system: 3–6 puttonyos indicates how many 20kg baskets of aszú berries were added per 136L barrel (gönc). More puttonyos = more botrytis = more sweetness and concentration.
  - 3 puttonyos: minimum 60 g/L RS
  - 5 puttonyos: minimum 120 g/L RS
  - 6 puttonyos: minimum 150 g/L RS
  - Aszú Eszencia: sweetest level, > 450 g/L RS
  - Eszencia: Pure botrytized free-run juice, 500–800+ g/L RS. Barely ferments due to extraordinary sugar concentration. Potentially centuries of aging.
- The most historically significant sweet wine region: Tokaj was the world's first legally delimited wine region (1700 — predating even Douro/Port designation).
- Profile: Apricot, orange peel, saffron, honey, ginger, smoky minerality from the volcanic soil. Extraordinary acid balance against the sweetness.

### Ice Wine / Eiswein

**The method:** Grapes are left on the vine until they naturally freeze at -8°C or lower. When pressed while frozen, the water (which freezes first) remains as ice crystals in the press. Only the concentrated unfrozen juice flows — which has a much higher sugar and acid concentration than normal juice.

**Conditions required:** Below -8°C at harvest (target -9 to -12°C for best concentration). The grapes must have been healthy (not botrytized) to survive on the vine until winter. Harvest typically occurs at dawn in December or January in Germany and Canada.

**Eiswein (Germany/Austria):** Made from any noble variety, most commonly Riesling. Very small quantities in years with reliable winter frost. Intense, precise, needle-sharp acid paired with intense sweetness.

**Icewine (Canada):** Canada is now the world's largest producer of ice wine by volume. Vidal Blanc (a hybrid variety that can withstand extreme cold) produces most commercial volume. Riesling and Cabernet Franc (rare pink Icewine) are more prestigious.
- Icewine regulations: Canadian standard requires natural freezing on the vine at -8°C or lower. "Cryoextraction" (artificially freezing grapes in industrial equipment, then pressing) is not permitted for the Icewine designation, though practiced in some countries.
- Niagara Peninsula and Okanagan Valley are the primary Canadian regions.

**Profile:** Typically much more obviously sweet and less acid than botrytized wines. The sugar/acid balance is different — ice wine has high acid in absolute terms but the sweetness registers more readily than Sauternes or TBA. Mango, peach, concentrated stone fruit, often more "clean" and less complex than botrytis.

### Passito / Appassimento

**The method:** Grapes are dried after harvest, concentrating all components (sugar, acid, flavor, color) through water evaporation.

**Venues of drying:**
- **Fruttai (lofts/storage buildings):** Grapes laid on bamboo mats in well-ventilated lofts. The classical Valpolicella method for Amarone.
- **Hanging drying:** Grape bunches hung from rafters (Recioto, some Vin Santo)
- **Outside on straw mats:** The passito tradition of dried-grape wine (Greek Vinsanto, some southern Italian wines)

**Amarone della Valpolicella:**
The most dramatic application of appassimento to produce a dry wine. Corvina, Rondinella, and Molinara grapes from Valpolicella are harvested in optimal condition, placed in wooden crates, and dried for approximately 90–120 days (usually January–March). They lose 30–40% of their weight in water.

The concentrated dried grapes are then crushed and fermented — a difficult fermentation because the sugar is so high (potential alcohol of 20%+). Fermentation is deliberately incomplete (or the winemaker allows it to ferment until the yeast can no longer survive the alcohol), resulting in a dry wine at approximately 15–17% ABV with very little residual sugar.

The paradox: A dry wine from dried grapes sounds impossible. The high sugar is converted to high alcohol; the result is not sweet. The concentration from drying gives enormous fruit density, tannin, and complexity without residual sweetness.

**Recioto della Valpolicella:** The sweet version — fermentation stopped before completion, leaving 30–80+ g/L residual sugar. The predecessor to Amarone (historically all Valpolicella dried-grape wine was sweet; dry Amarone emerged as a "mistake" that producers realized was superior).

**Vin Santo (Tuscany):** White or rosé (Occhio di Pernice) dessert wine. Grapes (Trebbiano and Malvasia for white; Sangiovese for rosé) dried for 3–6 months, then fermented and aged in small sealed barrels (caratelli) for 3–8 years. Wild yeast. Oxidative aging. Result: amber, nutty, caramel, hazelnut, dried apricot, complex. Ranges from dry to very sweet.

**Greek Vinsanto (Santorini):** Different etymology (not "Holy Wine" as in Tuscany — this is "wine of Santorini"). Assyrtiko dried in the sun and then barrel-aged. Intense, complex, high acid, sweet, volcanic mineral. One of Greece's finest wines.

**Passito di Pantelleria (Sicily):** Zibibbo (Muscat of Alexandria) grapes dried on the volcanic island of Pantelleria. Intensely aromatic, orange blossom, apricot, honey, sultana. Benchmark: Donnafugata Ben Ryé.
